Stiff peaks

Ever wondered how to tell when you have beaten egg whites to a stiff peak? When you take your beater off and turn it upside down the egg peak should stand straight up.


If you are going for soft peaks,you should still have a peak, but the tip should slump over instead of stand straight up.

When beating eggs to a stiff peak, make sure bowl and utensils are completely dry, and there is not even a speck of yolk in your whites. Beat on low or med- low speed . It also helps to start with cold bowl and beaters
