Baked Potato and Broccoli Soup

Okay...so I'm sorry that I have been MIA for months now but to be honest with you...I don't cook in the summer. But now that Autumn is officially upon us, I am in the kitchen more. And yesterday I made homemade soup to celebrate the first of Fall. So easy, so fast, and so less fattening than the original...enjoy!!

Prep: 20 minutes, Cook: 20 minutes

1/4 cup all-purpose flour
2 (14 1/4 ounce) cans low-sodium fat free chicken broth, divided
3 cups peeled, cubed potatoes (about 1 1/4 pounds)
2 cups broccoli florets, chopped
1 small onion, chopped
1 1/4 cups 2% reduced fat milk
1 (8 ounce) block 2% reduced fat sharp cheddar cheese, shredded

cheese, fully cooked bacon pieces and green onion for garnish

Whisk together flour and 1/3 cup chicken broth until smooth.

Combine remaining chicken broth and next 3 ingredients
